... Southwest style:
Two pork enchiladas... topped with copious amounts of red chili sauce... and rice. All of it homemade by daughter-in-law Erma and dropped off just a few minutes ago.
If a lifetime can be likened to a day, then this is Happy Hour!
Wow, that looks phenomenal. Wow, again. That is some seriously "right up my alley" kind of food right there.
ReplyDeleteYou are evil!! I too long for a sweet home cooked meal like that. I'll have to settle for some PA Dutch Gringo food here in SE PA. Maybe I'll whip up a batch of Chile and some tortilla's.

Andy: This may be hard to believe, but it tasted much better than it looks... and it looks GREAT to these eyes. Not pictured is the soup Erm brought over - a menudo-like soup, but substituting cubed pork for the tripe. Which is entirely OK with me... I'll eat menudo and like it, but that's in spite of the tripe.

ReplyDeleteMerry Christmas! Looks great! Only thing better would be a good bowl of my wife's okra Gumbo ya-ya (shrimp, oysters, "Gumbo Crabs" chicken, smoked sausage, andouille, and, occasionally rabbit) ummmm-ummm-ummm.
I won't lie...It did hurt just a little to see that...but you hit the nail on the head with the "what he's fighting for" comment. Chow hall processed turkey and dressing with cranberry sauce was better than average fare today. Average of course, for the current location!
